This Seafood Stuffed Salmon combines the richness of salmon with a savory crab and shrimp filling, resulting in a delicious and elegant entrée perfect for special occasions or a delightful dinner.
Ingredients:
For the Salmon and Stuffing:
2 (7-ounce) salmon fillets, skin removed
6 ounces lump crabmeat, drained and flaked
4 ounces tiny shrimp, drained
½ cup chopped mushrooms
¼ cup mayonnaise
¼ cup shredded Parmesan cheese
2 tablespoons lemon juice
2 tablespoons chopped green onion
2 tablespoons dry bread crumbs
Seafood seasoning, to taste
Cooking spray
Instructions:
1. Prepare the Salmon:
Preheat the oven to 350°F (175°C). Lightly spray a sheet pan with cooking spray.
Cut a slit through the middle of each salmon fillet, about two-thirds the length, creating a pocket for the stuffing.
2. Make the Seafood Stuffing:
In a bowl, combine the crabmeat, shrimp, chopped mushrooms, mayonnaise, Parmesan cheese, lemon juice, green onion, and bread crumbs. Mix until well incorporated.
3. Stuff and Season the Salmon:
Shape two-thirds of the stuffing mixture into two mounds on the prepared sheet pan.
Place each salmon fillet over a stuffing mound, then fill the top slit of each fillet with the remaining stuffing.
Season each stuffed fillet with seafood seasoning to taste.
4. Bake the Salmon:
Bake in the preheated oven for about 30 minutes, or until the salmon flakes easily with a fork and the stuffing is heated through.
Tips:
Alternative Stuffing Additions: Add finely chopped celery or bell peppers for extra flavor and texture.
Cheese Variations: Substitute Parmesan with Monterey Jack or Mozzarella for a different flavor profile.
Serving Suggestion: Pair with steamed vegetables, rice pilaf, or a fresh green salad for a complete meal.
