Seafood Stuffed Salmon: A Gourmet Crab and Shrimp Entrée

This Seafood Stuffed Salmon combines the richness of salmon with a savory crab and shrimp filling, resulting in a delicious and elegant entrée perfect for special occasions or a delightful dinner.


Ingredients:

For the Salmon and Stuffing:

  • 2 (7-ounce) salmon fillets, skin removed

  • 6 ounces lump crabmeat, drained and flaked

  • 4 ounces tiny shrimp, drained

  • ½ cup chopped mushrooms

  • ¼ cup mayonnaise

  • ¼ cup shredded Parmesan cheese

  • 2 tablespoons lemon juice

  • 2 tablespoons chopped green onion

  • 2 tablespoons dry bread crumbs

  • Seafood seasoning, to taste

  • Cooking spray


Instructions:

1. Prepare the Salmon:

  • Preheat the oven to 350°F (175°C). Lightly spray a sheet pan with cooking spray.

  • Cut a slit through the middle of each salmon fillet, about two-thirds the length, creating a pocket for the stuffing.

2. Make the Seafood Stuffing:

  • In a bowl, combine the crabmeat, shrimp, chopped mushrooms, mayonnaise, Parmesan cheese, lemon juice, green onion, and bread crumbs. Mix until well incorporated.

3. Stuff and Season the Salmon:

  • Shape two-thirds of the stuffing mixture into two mounds on the prepared sheet pan.

  • Place each salmon fillet over a stuffing mound, then fill the top slit of each fillet with the remaining stuffing.

  • Season each stuffed fillet with seafood seasoning to taste.

4. Bake the Salmon:

  • Bake in the preheated oven for about 30 minutes, or until the salmon flakes easily with a fork and the stuffing is heated through.
