Ingredients:
- 6 oz dark chocolate (70% cocoa), chopped
- 1 cup heavy whipping cream, cold
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 2 large egg whites (room temperature)
- ¼ teaspoon salt
For Garnish (Optional):
- Whipped cream
- Chocolate shavings
- Fresh berries
Instructions:
1. Melt the Chocolate:
- In a heatproof bowl, melt dark chocolate using a double boiler or microwave (in 20-second bursts).
- Stir until smooth, then let cool slightly.
2. Whip the Cream:
- In a mixing bowl, beat heavy cream, sugar, and vanilla extract until soft peaks form.
- Set aside in the fridge.
3. Whip the Egg Whites:
- In another bowl, beat egg whites and salt until stiff peaks form.
4. Combine Everything:
- Gently fold the egg whites into the cooled chocolate.
- Then, fold in the whipped cream until just combined.
5. Chill & Serve:
- Spoon into serving glasses and refrigerate for at least 1 hour.
- Garnish with whipped cream, chocolate shavings, or berries.

- Use good-quality chocolate for the best flavor.
- Let the mousse chill longer (4 hours or overnight) for a firmer texture.
