This Classic Mac and Cheese is creamy, cheesy, and packed with rich flavors. It’s the perfect comfort food, whether baked for a crispy top or served creamy straight from the stovetop.
Ingredients:
For the Pasta:
- 12 oz elbow macaroni (or cavatappi)
- 1 tablespoon salt (for boiling water)
For the Cheese Sauce:
- 4 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon mustard powder (optional, for depth of flavor)
- ½ teaspoon garlic powder (optional)
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
For the Topping (If Baking):
- ½ cup breadcrumbs (panko recommended)
- 2 tablespoons butter, melted
- ¼ teaspoon paprika (for extra color)
Instructions:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add macaroni and cook until al dente (slightly firm). Drain and set aside.
2. Make the Cheese Sauce:
- In a large saucepan, melt butter over medium heat.
- Add flour, whisking continuously for 1-2 minutes to form a roux.
- Gradually whisk in milk and heavy cream, stirring until smooth.
- Add mustard powder, garlic powder, salt, and black pepper.
- Let the sauce simmer for 3-4 minutes until thickened.
3. Add the Cheese:
- Reduce heat to low and stir in cheddar, mozzarella, and Parmesan cheese until melted and creamy.
4. Combine with Pasta:
- Add the drained macaroni to the cheese sauce, stirring to coat.
- Serve as is for a stovetop version, or continue to bake for a crispy topping.
5. (Optional) Bake for a Golden Crust:
- Preheat oven to 375°F (190°C).
- Transfer mac and cheese to a greased 9×13-inch baking dish.
- In a small bowl, mix breadcrumbs, melted butter, and paprika.
- Sprinkle over the mac and cheese.
- Bake for 20 minutes, or until golden and bubbly.
Tips:
- Use freshly shredded cheese for the best melt—pre-shredded cheese has anti-caking agents that prevent smooth melting.
- Add a pinch of cayenne pepper for a slight kick.
- For extra richness, stir in cooked crispy bacon or caramelized onions before baking.
