Thumbprint Cookies are a classic treat with a buttery, crumbly texture and a sweet jam-filled center. These cookies are perfect for holidays, gatherings, or whenever you’re in the mood for something simple yet delicious.
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup fruit jam (such as raspberry, strawberry, or apricot)
Instructions:
Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Make the Dough:
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Mix in the vanilla extract.
- Gradually add the flour and salt, mixing until the dough comes together.
Shape the Cookies:
- Scoop out 1 tablespoon of dough and roll it into a ball. Place it on the prepared baking sheet. Repeat with the remaining dough, spacing the cookies about 2 inches apart.
- Use your thumb or the back of a teaspoon to gently press a small well into the center of each cookie.
Fill with Jam:
- Spoon about 1/2 teaspoon of jam into each well, being careful not to overfill.
Bake:
- Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Cool and Serve:
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
Tips:
- Chill the dough for 15-20 minutes before shaping if it feels too soft.
- Experiment with different fillings like lemon curd, Nutella, or peanut butter.
- Store cookies in an airtight container at room temperature for up to a week.
