This Thai-inspired peanut butter ramen is a quick and creamy dish perfect for weeknight dinners. With its savory peanut sauce and tender noodles, it’s both comforting and packed with flavor.
Ingredients:
- 2 packs instant ramen noodles (discard seasoning packets)
- 1/4 cup peanut butter (creamy or chunky)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar or lime juice
- 1 tablespoon sriracha (optional, for heat)
- 1 teaspoon honey or brown sugar
- 2 cloves garlic, minced
- 1/2 teaspoon grated ginger
- 1/2 cup coconut milk or water (for thinning sauce)
- 1/4 cup chopped peanuts (for garnish)
- 1/4 cup chopped green onions (for garnish)
- 1/2 cup shredded carrots or thinly sliced bell peppers (optional)
Instructions:
Cook the Ramen:
- Bring a pot of water to a boil and cook the ramen noodles according to the package instructions. Drain and set aside.
Prepare the Sauce:
- In a medium-sized pan, heat sesame oil over medium heat. Add minced garlic and grated ginger, and sauté for 1 minute until fragrant.
- Stir in peanut butter, soy sauce, rice vinegar (or lime juice), sriracha, honey (or brown sugar), and coconut milk. Cook on low heat, stirring constantly, until the sauce is smooth and creamy.
Combine Noodles and Sauce:
- Add the cooked ramen noodles to the pan and toss to coat them evenly with the sauce.
Add Vegetables (Optional):
- If using shredded carrots or bell peppers, toss them in for a crunchy texture. Cook for 1-2 minutes until slightly softened.
Serve:
- Transfer to serving bowls. Garnish with chopped peanuts and green onions. Serve immediately.
Tips:
- For a protein boost, add cooked chicken, shrimp, or tofu.
- Adjust the sauce consistency by adding more coconut milk or water.
- For a spicier kick, add extra sriracha or chili flakes.
