Smashed Avocado Toast with Egg is a quick, healthy, and satisfying breakfast or snack. This recipe combines creamy avocado, perfectly cooked eggs, and crunchy toast for a simple yet delicious meal.


Ingredients:

  • 2 slices of whole-grain bread (or your favorite bread)
  • 1 ripe avocado
  • 2 eggs (fried, poached, or boiled)
  • 1/4 teaspoon red pepper flakes (optional, for spice)
  • 1 teaspoon lemon juice
  • Salt and black pepper, to taste
  • Optional toppings: chopped parsley, cherry tomatoes, or crumbled feta cheese

Instructions:

  1. Toast the Bread:

    • Toast the bread slices to your desired crispiness. Set aside.
  2. Prepare the Avocado:

    • Cut the avocado in half, remove the pit, and scoop out the flesh into a small bowl.
    • Add lemon juice, a pinch of salt, and black pepper. Mash the avocado with a fork until smooth but slightly chunky.
  3. Cook the Eggs:

    • Cook the eggs to your liking:
      • Fried Eggs: Heat a non-stick skillet with a little oil or butter and fry the eggs until the whites are set but the yolks are still runny.
