Ingredients:
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- 2 tablespoons olive oil
For the Sauce:
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped (packed in oil)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Optional: Red pepper flakes, for a little heat
Instructions:
Prepare the Chicken:
- Pat the chicken dry with paper towels and season with paprika, garlic powder, oregano, salt, and black pepper.
Sear the Chicken:
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side, until golden brown. Remove from the skillet and set aside (chicken doesn’t need to be fully cooked yet).
Make the Sauce:
- In the same skillet, reduce heat to medium. Add minced garlic and sauté for 1 minute until fragrant.
- Stir in sun-dried tomatoes and cook for another minute.
- Pour in chicken broth and heavy cream, stirring well to combine.
- Add Parmesan cheese and Italian seasoning, stirring until the sauce thickens slightly.
Add Spinach and Chicken:
- Stir fresh spinach into the sauce until wilted. Return the chicken to the skillet, spooning sauce over the top.
- Cover and simmer for 7-10 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/74°C).
Serve:
- Garnish with extra Parmesan cheese or fresh basil, if desired. Serve warm with rice, pasta, or crusty bread to soak up the sauce.

- For a dairy-free version, use coconut cream and omit the Parmesan.
