One-Pan Tuscan Chicken is a creamy and flavorful dish featuring juicy chicken, sun-dried tomatoes, spinach, and a garlic-Parmesan cream sauce. It’s a quick and easy recipe perfect for weeknight dinners or special occasions.


Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

For the Sauce:

  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Optional: Red pepper flakes, for a little heat

Instructions:

  1. Prepare the Chicken:

    • Pat the chicken dry with paper towels and season with paprika, garlic powder, oregano, salt, and black pepper.
  2. Sear the Chicken:

    • Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side, until golden brown. Remove from the skillet and set aside (chicken doesn’t need to be fully cooked yet).
  3. Make the Sauce:

    • In the same skillet, reduce heat to medium. Add minced garlic and sauté for 1 minute until fragrant.
    • Stir in sun-dried tomatoes and cook for another minute.
    • Pour in chicken broth and heavy cream, stirring well to combine.
    • Add Parmesan cheese and Italian seasoning, stirring until the sauce thickens slightly.
  4. Add Spinach and Chicken:

    • Stir fresh spinach into the sauce until wilted. Return the chicken to the skillet, spooning sauce over the top.
    • Cover and simmer for 7-10 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/74°C).
  5. Serve:

    • Garnish with extra Parmesan cheese or fresh basil, if desired. Serve warm with rice, pasta, or crusty bread to soak up the sauce.

Tips:

  • For a dairy-free version, use coconut cream and omit the Parmesan.
  • Add mushrooms or cherry tomatoes for extra flavor and texture.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
