Hot Cocoa Cookies are a decadent treat inspired by the comforting flavors of hot chocolate. With a chewy chocolate base, gooey marshmallows, and chocolate chunks, these cookies are perfect for winter nights or festive gatherings.
Ingredients:
For the Cookies:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or chunks
For the Topping:
- 12 large marshmallows, cut in half
- 1/2 cup mini chocolate chips or shavings (optional, for garnish)
Instructions:
Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Make the Cookie Dough:
- In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips or chunks.
Shape and Bake:
- Scoop out tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set but the centers are still slightly soft.
Add Marshmallows:
- Remove the cookies from the oven and immediately press half a marshmallow into the center of each cookie, sticky side down.
- Return the cookies to the oven and bake for an additional 2-3 minutes, or until the marshmallows puff slightly.
Garnish and Cool:
- Remove the cookies from the oven and sprinkle with mini chocolate chips or shavings for extra indulgence. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Serve:
- Enjoy warm for the ultimate gooey experience, or let them cool completely for a chewy treat.
Tips:
- Use mini marshmallows if you prefer smaller toppings—just sprinkle a few on each cookie before the second bake.
- For a festive touch, top with crushed candy canes.
- Store cookies in an airtight container at room temperature for up to 3 days.
