Hot Cocoa Cookies: A Chewy and Gooey Winter Treat

Hot Cocoa Cookies are a decadent treat inspired by the comforting flavors of hot chocolate. With a chewy chocolate base, gooey marshmallows, and chocolate chunks, these cookies are perfect for winter nights or festive gatherings.


Ingredients:

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chunks

For the Topping:

  • 12 large marshmallows, cut in half
  • 1/2 cup mini chocolate chips or shavings (optional, for garnish)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Cookie Dough:

    • In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the egg and vanilla extract, and mix until well combined.
    • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips or chunks.
  3. Shape and Bake:

    • Scoop out tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
    • Bake for 8-10 minutes, or until the edges are set but the centers are still slightly soft.
  4. Add Marshmallows:

    • Remove the cookies from the oven and immediately press half a marshmallow into the center of each cookie, sticky side down.
    • Return the cookies to the oven and bake for an additional 2-3 minutes, or until the marshmallows puff slightly.
  5. Garnish and Cool:

    • Remove the cookies from the oven and sprinkle with mini chocolate chips or shavings for extra indulgence. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  6. Serve:
