Homemade Creamed Corn: A Buttery and Creamy Side Dish

Creamed Corn is a rich, buttery, and creamy side dish made with sweet corn, milk, and a hint of seasoning. It’s the perfect accompaniment to grilled meats, holiday dinners, or a comforting meal any time of the year.

Ingredients:

  • 4 cups corn kernels (fresh, frozen, or canned, drained)
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour (for thickening)
  • 1 teaspoon sugar (optional, for extra sweetness)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon smoked paprika (optional, for extra depth)
  • 1/4 cup grated Parmesan cheese (optional, for extra richness)

Instructions:

  1. Melt the Butter:

    • In a large skillet or saucepan, melt the butter over medium heat.
  2. Cook the Corn:

    • Add the corn kernels and cook for 3-4 minutes, stirring occasionally.
  3. Make the Creamy Base:

    • Sprinkle flour over the corn and stir well to coat. Cook for 1 minute to remove the raw flour taste.
    • Pour in the heavy cream and whole milk, stirring continuously.
  4. Season and Simmer:

    • Add sugar, salt, black pepper, garlic powder, and smoked paprika (if using).
    • Reduce heat and simmer for 5-7 minutes, stirring occasionally, until the mixture thickens.
  5. Add Cheese (Optional):

    • Stir in grated Parmesan cheese for a richer, more savory flavor.
  6. Serve:

    • Remove from heat and serve warm. Garnish with chopped parsley or extra Parmesan if desired.

Tips:

  • For extra creaminess, blend half the mixture using an immersion blender.
  • For a smoky flavor, use fire-roasted corn or add a dash of cayenne pepper.
  • Make it dairy-free by substituting coconut milk and plant-based butter.
