Creamed Corn is a rich, buttery, and creamy side dish made with sweet corn, milk, and a hint of seasoning. It’s the perfect accompaniment to grilled meats, holiday dinners, or a comforting meal any time of the year.
Ingredients:
- 4 cups corn kernels (fresh, frozen, or canned, drained)
- 1 cup heavy cream
- 1/2 cup whole milk
- 2 tablespoons unsalted butter
- 1 tablespoon all-purpose flour (for thickening)
- 1 teaspoon sugar (optional, for extra sweetness)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon smoked paprika (optional, for extra depth)
- 1/4 cup grated Parmesan cheese (optional, for extra richness)
Instructions:
Melt the Butter:
- In a large skillet or saucepan, melt the butter over medium heat.
Cook the Corn:
- Add the corn kernels and cook for 3-4 minutes, stirring occasionally.
Make the Creamy Base:
- Sprinkle flour over the corn and stir well to coat. Cook for 1 minute to remove the raw flour taste.
- Pour in the heavy cream and whole milk, stirring continuously.
Season and Simmer:
- Add sugar, salt, black pepper, garlic powder, and smoked paprika (if using).
- Reduce heat and simmer for 5-7 minutes, stirring occasionally, until the mixture thickens.
Add Cheese (Optional):
- Stir in grated Parmesan cheese for a richer, more savory flavor.
Serve:
- Remove from heat and serve warm. Garnish with chopped parsley or extra Parmesan if desired.
Tips:
- For extra creaminess, blend half the mixture using an immersion blender.
- For a smoky flavor, use fire-roasted corn or add a dash of cayenne pepper.
- Make it dairy-free by substituting coconut milk and plant-based butter.
