Crispy Corn Ribs: A Fun and Flavorful Inspired Snack

Corn Ribs are a fun and flavorful way to enjoy corn on the cob—cut into rib-like strips, seasoned, and roasted or air-fried until crispy. This viral dish is a perfect snack or side dish!


Ingredients:

  • 2 ears of corn, husked and cleaned
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional, for spice)

For Serving (Optional):

  • Lime wedges
  • Fresh cilantro, chopped
  • Crumbled feta or Parmesan cheese
  • Ranch or chipotle mayo dip

Instructions:

  1. Cut the Corn into Ribs:

    • Place each corn cob upright and carefully cut into quarters lengthwise using a sharp knife. (Use a rocking motion for better control.)
  2. Season the Corn:

    • In a bowl, mix olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
    • Brush or toss the corn ribs with the seasoning mix.
  3. Cook the Corn Ribs:

    Air Fryer Method:

    • Preheat air fryer to 375°F (190°C).
    • Arrange corn ribs in a single layer and air fry for 10-12 minutes, flipping halfway.

    Oven Method:

    • Preheat oven to 400°F (200°C).
    • Bake on a lined sheet for 20-25 minutes, flipping halfway.

    Grill Method:

    • Grill over medium heat for 8-10 minutes, turning occasionally.
  4. Serve:

    • Squeeze fresh lime juice over the corn ribs.
    • Garnish with cilantro, crumbled cheese, or a drizzle of chipotle mayo.

Tips:

  • Use a sharp knife to cut the corn safely—microwaving for 30 seconds before cutting can help soften it.
  • For extra flavor, add melted butter after cooking.
