
Chaaza is a traditional Burmese curry made with coconut milk, aromatic spices, and tender protein (chicken or seafood). This dish has a creamy, mildly spicy, and rich flavor, making it a comforting meal served with rice or noodles.
Ingredients:
For the Curry Base:
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon turmeric powder
- ½ teaspoon paprika (for color)
- ½ teaspoon chili flakes (optional, for heat)
- 1 teaspoon salt
- 1 teaspoon fish sauce (optional, for umami)
- 1 tablespoon tomato paste
- 1 can (14 oz) coconut milk
- ½ cup vegetable or chicken broth
For the Protein & Vegetables:
- 1 lb chicken (boneless, cut into cubes) OR shrimp (peeled & deveined)
- ½ cup bell peppers, sliced
- ½ cup carrots, julienned
- ½ cup potatoes, diced (optional)
For Garnish & Serving:
- Fresh cilantro, chopped
- 2 tablespoons crushed peanuts (optional)
- Lime wedges
- Steamed jasmine rice OR vermicelli noodles
Instructions:
1. Sauté the Aromatics:
- In a large pan or wok, heat vegetable oil over medium heat.
- Add onions and sauté until soft (2-3 minutes).
- Stir in garlic and ginger and cook for another 30 seconds.
2. Build the Curry Base:
- Add curry powder, turmeric, paprika, chili flakes, and salt, stirring well.
- Mix in tomato paste and cook for 1 minute.
- Pour in coconut milk and broth, stirring to combine.
- Simmer for 5 minutes to let flavors develop.
3. Cook the Protein & Vegetables:
- Add chicken (or shrimp) to the pan and cook until done (chicken: 8-10 minutes, shrimp: 3-4 minutes).
- Stir in bell peppers, carrots, and potatoes.
- Simmer for another 5 minutes, stirring occasionally.
4. Finish & Serve:
- Taste and adjust seasoning (add fish sauce, more salt, or lime juice if needed).
- Serve hot over steamed jasmine rice or vermicelli noodles.
- Garnish with cilantro, crushed peanuts, and lime wedges.
Tips:
- For extra richness, add 1 tablespoon peanut butter to the curry.
- Make it spicier by adding extra chili flakes or fresh Thai chilies.
- Vegetarian option: Replace chicken/shrimp with tofu and chickpeas.
