
Bombay Sandwiches are popular Indian street food made with layers of spiced vegetables, buttered bread, and tangy green chutney. They’re flavorful, crunchy, and perfect for a quick snack or light lunch.
Ingredients:
For the Sandwich:
6 slices white or brown bread
2 tablespoons butter, softened
2–3 tablespoons green chutney
1 medium boiled potato, thinly sliced
1 small cucumber, thinly sliced
1 small tomato, thinly sliced
1 small beetroot, boiled and sliced (optional)
Chaat masala, to taste
Salt, to taste
Black pepper, to taste
For the Green Chutney:
1 cup fresh coriander leaves
½ cup mint leaves
1–2 green chilies
1 small garlic clove
½ inch ginger
1 tablespoon lemon juice
Salt, to taste
Water, as needed to blend
Instructions:
1. Make the Green Chutney:
Blend all chutney ingredients in a blender with a splash of water until smooth.
Adjust seasoning and keep chilled until use.
2. Prepare the Sandwich Layers:
Spread butter on one side of each bread slice.
On top of the butter, spread a thin layer of green chutney.
Layer with potato, cucumber, tomato, and beet slices.
Sprinkle each layer with salt, pepper, and chaat masala.
3. Assemble & Serve:
Close the sandwich with another chutney-buttered bread slice.
Trim crusts (optional) and cut diagonally into triangles.
Serve fresh or toast it in a grill pan or sandwich maker for a crispy version.
Tips:
Add cheese for a cheesy Bombay sandwich twist.
For extra crunch, add thin slices of onion or lettuce.
