
Pancit Bihon is a classic Filipino stir-fried noodle dish made with thin rice noodles, vegetables, and a savory soy-based sauce, often served at celebrations.
Ingredients:
8 oz bihon (rice stick noodles)
2 tablespoons vegetable oil
1 small onion, sliced
3 cloves garlic, minced
½ pound chicken breast, sliced thinly
½ pound shrimp (optional)
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon fish sauce (optional)
1 cup chicken broth
1 medium carrot, julienned
1 cup cabbage, shredded
½ cup green beans, sliced
½ cup bell pepper, sliced
Salt and pepper, to taste
2 green onions, chopped
1 lemon or calamansi, cut into wedges
Instructions:
Soak the Noodles:
Place bihon noodles in a bowl of warm water for 10 minutes or until softened.
Drain and set aside.
Sauté the Aromatics:
Heat vegetable oil in a large pan over medium heat.
Add onion and garlic, sauté for 2 minutes until fragrant.
Cook the Proteins:
Add chicken and cook for 3-4 minutes until no longer pink.
Add shrimp (if using) and cook for another 2 minutes.
Add Sauces & Broth:
Pour in soy sauce, oyster sauce, fish sauce, and chicken broth. Stir well.
Cook the Vegetables:
Add carrots, cabbage, green beans, and bell pepper. Stir-fry for 3 minutes until slightly tender.
Mix in the Noodles:
Add the drained bihon noodles, tossing them in the sauce until fully coated.
Cook for another 3-5 minutes, stirring frequently until the noodles absorb the broth.
Final Touches & Serve:
Season with salt and pepper to taste.
Garnish with green onions and serve with lemon or calamansi wedges.

For Extra Flavor: Add chorizo, pork, or tofu for variation.
