Authentic Pancit Bihon Recipe – Easy Filipino Stir-Fried Rice Noodles

Pancit Bihon is a classic Filipino stir-fried noodle dish made with thin rice noodles, vegetables, and a savory soy-based sauce, often served at celebrations.


Ingredients:

  • 8 oz bihon (rice stick noodles)

  • 2 tablespoons vegetable oil

  • 1 small onion, sliced

  • 3 cloves garlic, minced

  • ½ pound chicken breast, sliced thinly

  • ½ pound shrimp (optional)

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon fish sauce (optional)

  • 1 cup chicken broth

  • 1 medium carrot, julienned

  • 1 cup cabbage, shredded

  • ½ cup green beans, sliced

  • ½ cup bell pepper, sliced

  • Salt and pepper, to taste

  • 2 green onions, chopped

  • 1 lemon or calamansi, cut into wedges


Instructions:

  1. Soak the Noodles:

    • Place bihon noodles in a bowl of warm water for 10 minutes or until softened.

    • Drain and set aside.

  2. Sauté the Aromatics:

    • Heat vegetable oil in a large pan over medium heat.

    • Add onion and garlic, sauté for 2 minutes until fragrant.

  3. Cook the Proteins:

    • Add chicken and cook for 3-4 minutes until no longer pink.

    • Add shrimp (if using) and cook for another 2 minutes.

  4. Add Sauces & Broth:

    • Pour in soy sauce, oyster sauce, fish sauce, and chicken broth. Stir well.

  5. Cook the Vegetables:

    • Add carrots, cabbage, green beans, and bell pepper. Stir-fry for 3 minutes until slightly tender.

  6. Mix in the Noodles:

    • Add the drained bihon noodles, tossing them in the sauce until fully coated.

    • Cook for another 3-5 minutes, stirring frequently until the noodles absorb the broth.

  7. Final Touches & Serve:

    • Season with salt and pepper to taste.

    • Garnish with green onions and serve with lemon or calamansi wedges.

  • For Extra Flavor: Add chorizo, pork, or tofu for variation.

  • Make it Vegetarian: Skip the meat and add more vegetables like mushrooms or snap peas.
