- 1 lb smoked sausage (such as kielbasa or bratwurst), sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 teaspoon paprika (smoked or sweet)
- ½ teaspoon black pepper
- ½ teaspoon caraway seeds (optional, for extra flavor)
- 3 cups sauerkraut, drained and rinsed (for milder flavor)
- 2 cups chicken broth (or beef broth for a deeper taste)
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon Dijon mustard (optional, for extra depth)

Instructions:
Sauté the Sausage:
