Brownie Baked Oatmeal is a healthy, chocolatey breakfast that feels like dessert. Packed with oats, cocoa, and a touch of sweetness, it’s perfect for starting your day with a nutritious and indulgent twist.

Ingredients:

  • 2 cups rolled oats
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk (dairy or plant-based)
  • 2 ripe bananas, mashed (or 1/2 cup applesauce for a banana-free option)
  • 1/4 cup maple syrup or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips or chunks

Optional Toppings:

  • Fresh berries
  • Peanut butter drizzle
  • Chopped nuts

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. Mix the Dry Ingredients:

    • In a large bowl, combine rolled oats, cocoa powder, baking powder, and salt. Stir well.
  3. Combine the Wet Ingredients:

    • In another bowl, whisk together the mashed bananas, milk, maple syrup, eggs, and vanilla extract until smooth.
  4. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the bowl with the dry ingredients. Mix until well combined. Fold in the chocolate chips.
  5. Bake:

    • Pour the mixture into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, or until the center is set and a toothpick inserted comes out clean.
  6. Cool and Serve:

    • Let the baked oatmeal cool for 5 minutes before slicing. Serve warm with your favorite toppings like berries, nuts, or a drizzle of peanut butter.

Tips:

  • Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the microwave or enjoy cold.
  • For extra protein, add a scoop of chocolate protein powder to the mixture.
  • Use mini chocolate chips for better distribution of chocolate in each bite.
