Tzatziki Cucumber Slices: A Fresh and Healthy Appetizer

Tzatziki Cucumber Slices are a light, refreshing, and easy-to-make appetizer or snack. With the creamy tang of tzatziki sauce and the crunch of fresh cucumber, they’re perfect for parties, lunches, or healthy snacking.


Ingredients:

  • 1 large cucumber, sliced into 1/4-inch thick rounds
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: chopped fresh parsley, cherry tomato halves, or crumbled feta cheese

Instructions:

  1. Prepare the Tzatziki Sauce:

    • In a bowl, combine Greek yogurt, minced garlic, dill, olive oil, lemon juice, salt, and black pepper. Mix until well combined.
    • Cover and refrigerate the tzatziki sauce for at least 15 minutes to allow the flavors to meld.
  2. Slice the Cucumber:

    • Wash and dry the cucumber. Slice it into 1/4-inch thick rounds and arrange them on a serving platter.
  3. Assemble the Cucumber Slices:

    • Use a small spoon or piping bag to dollop a generous amount of tzatziki sauce onto each cucumber slice.
  4. Garnish and Serve:

    • Top each slice with your choice of garnish, such as parsley, cherry tomato halves, or crumbled feta cheese.
    • Serve immediately, or refrigerate until ready to serve.

Tips:

  • For a less watery tzatziki, grate the cucumber (before slicing) and squeeze out the excess moisture before mixing it into the sauce.
  • Use mini cucumbers or English cucumbers for a sweeter, less bitter flavor.
  • These can be prepared a few hours in advance; just assemble closer to serving time to maintain the crunch.
